Homemade Bone Broth (Caldín) 31/05/2019, Recipes
This gut-friendly bone broth is a healthy, warming staple and a great way to use up the whole chicken. A little cup every morning leaves you ready to face the day by boosting your immune system. Prepare a batch once a week and store in the fridge or freeze for later.
Time: approx. 10 min active, 12-18 hours total. Average £/serving: £1.30. Freezes well.
What you get:
1 whole chicken carcass
4 garlic gloves
2 handfuls of parsley
4 celery sticks
From your larder:
2 Tbsp of apple cider vinegar
2 bay leaves
Heat the olive oil in a large stainless steel or ceramic cooking pot. Add the chicken bones and stir in the pan to bronze a little. Now add all the fresh ingredients, parsley, vinegar and couple of bay leaves.
Stir and sweat until the vegetables are soft, about 3 mins.
Only now add enough water to cover all the ingredients, while still leaving room at the top of the pan. Cover with a lid and bring to the boil. Reduce the heat and simmer, lid on, for at least 6 hours. The longer the bones simmer, the more nutrients are released so 18-20 hours slow cooking is great; some people leave it for 24 hours.
Strain the liquid using a fine mesh strainer and store in glass jars in the fridge or freeze. Then enjoy the magic healing power chicken bone broth.
