Curry leaves have an strong aromatic flavor that some describe as nutty yet with citrus notes and a hint of asafoetida, anise, and lemongrass. When cooked, the nuttiness comes through strongest. Try adding a few leaves to the oil of a pan and fry until they're sizzling then carry on cooking your curry in the normal way. It will bring a welcome additional depth of flavour.
