The leanest of pork joints, legs are one of the most sought-after cuts, ideal for glazing and slow-roasting. Try removing the joint from the bone then filling the meat with herbs and tying it before roasting. Don't expect much crackling, however – leg joints tend to have less fat than other cuts.
