The shoulder or spare rib joint is fantastic roasted and even better prepared in a slowcooker where the meat is given time to soften whilst maintaining its moistness. If roasting, score the fat, pat it dry, add salt and cook on a high heat for the first 10 minutes for delicious crackling.
