A small flat cut that is rolled into a joint of beef, brisket comes from the belly of the cow. It works best when chopped up and slow-cooked as part of a stew or in a sauce, to produce very tender cuts of meat.
Farm Wilder beef is sustainably reared in Devon. Our farmers maintain habitat for endangered Marsh Fritillary Butterflies and Cuckoos. The native cattle breeds are pasture-fed, a regenerative farming technique that locks carbon into the soil.
