Caught using pots which are more selective in the species they catch than trawled cuttlefish.
From the same family as squid the white and firm flesh benefits from hot and fast cooking (eg deep frying) or low and slow cooking (eg stewing), anything in between can make it tough.
Coat in a mix of plain flour, salt and paprika and deep fry quickly until starting to go golden brown. Drain well on kitchen paper and serve with pick of flaked salt, a lemon /lime wedge and some mayonnaise spiked with garlic or chilli.
