Wild Keta salmon have a naturally lighter colour, lower oil content and milder flavour than other 4 wild salmon species in the Pacific but are still darker than farmed salmon. As a result of the lower oil content the delicate flavour benefits hugely from not being overcooked.
These salmon spend the majority of their lives in the Arctic and North Pacific Oceans before returning to Alaskan rivers. Swimming further in their lifetimes than other species of Pacific salmon leads to leaner meat and a creamy texture.
Pan fry skin side down until the colour change is about two thirds of the way up the side of the fillet then flip to finish the cooking briefly on the other side.
