Farmed salmon is a flavoursome favourite which pairs beautifully with a fresh salad and strong enough to handle oriental spices. Usually deep orange or red in colour, the oily flesh is packed with protein, Omega-3 and Vitamin D.

Smoking or poaching salmon is possible. Pan-roasting is a great method of cooking where you brush the fillet with oil and then sear in a metal handled pan for 3-4 minutes on a medium-high heat. Then pop the pan in a very hot oven for a further 3-4 minutes. But be careful not to overcook as the flesh will lose its sweetness.

Serves 2 - simply cut in half.
