The John Dory’s body is distinguished by a dark spot on its side, designed to confuse predators. The mark also gives rise to its alternative name - St Peters or St Pierre fish because the mark is where it was touched by St Peter. The fillets are white and firm and comparable thickness to those taken from flat fish. It is favoured by many for a subtle taste which makes the John Dory an ideal complement to simple boiled new potatoes and a beurre noisette sauce with capers.
