Also known as huss or rock salmon in fish and chip shops the dog fish is a member of the shark family not often targeted by fishermen. This is down to environmental concerns due to their slow growth and the lack of demand from consumers, often due to their name or image. Many are however caught while fishing for more profitable species and are thrown back into the sea dead.
Sole of Discretion has started landing them and paying a fair price to the fishermen in the hope that we will eat them, saving the catching of another fish to take their place on our plates. Their approach is to view the eco-system as a whole, and not try and catch one species at the expense of another. For more information see their producer page.
They are excellent battered and fried (often known as rock salmon in fish & chip shops) and their firm flesh makes them great in stews and soups such as the French classic bouillabaisse with its garlicky rouille.
