One of the fish held in the highest esteem by chef and diners alike, the turbot is a large flat fish from which thick and firm steaks can be cut while the flesh retains the delicate flavour of smaller flat fish.
With care and attention the steak can be pan fried to give crisp skin and tender meat before finishing with a knob of butter in the pan. Alternatively it can be poached and served with a hollandaise sauce.
