White Lake Dairy is hot on the lips of anyone who knows their artisan cheeses, and this ewe’s milk pecorino is their British equivalent of an Italian staple. Made from raw sheep’s milk this hard cheese has a hard natural rustic-looking rind, with a dry briny finish. Let it settle on the tongue to pick up caramel hints and notes of toasted almonds. Pecorino is known for its distinctly savoury taste, which makes it the perfect ingredient for pesto and to sharpen up an ordinary cheese sauce.
