Fosseway Fleece is named after The Fosse Way, an old Roman road that originally linked Exeter to Lincoln. Part of this ancient road runs past Ditcheat where the Somerset Cheese Company is based, and where you’ll find this delightful ewe’s cheese quietly maturing. At first glance it’s a little like a Cheddar in texture, as it is made to a Cheddar recipe by Phil Rainbow, and it has a well-rounded fresh, clean taste that ends in a mellow afterglow. It’s a light cheese with an earthy rind is and is perfect picnic fodder.
