Halloumi is everyone’s favourite summer barbecue cheese. Firm and a little salty it holds its shape without melting. That is because halloumi is made in a slightly different way to any other cheese. The milk curds are cooked in whey after they’ve been pressed, and that changes the whole composition of the cheese. It doesn’t melt, and instead it squeaks.  This halloumi is rather special, as it’s made from fresh, creamy Dorest ewe’s milk and in small batches. You’ll have to be quick, as this stuff simply flies off the shelves.
