Although inspired by the classic Italian cheese we all know so well, Westcombe Dairy have crafted their own recipe and developed a unique high-quality ricotta that doesn’t mimic its Italian counterpart; it rivals it.
At Westcombe, the cows are close by, so the milk is fresh as it gets – which helps to keep the hand-churned cheese as light and airy as possible. Expect a rich, slightly grainy texture that is pleasantly salty with a full dairy flavour. Stir this into pasta with roasted butternut squash or crumble onto a homemade pizza.
