If you’re looking for a cheese of high acclaim, this Caerphilly has some serious recommendations behind it, including gold at the British Cheese Awards. Despite its very Welsh name – you pronounce Gorwydd as ‘Gor-with’ – Caerphilly has been made in the West Country for many moons and this particular recipe is over a hundred years old.
Made from raw unpasteurised cow’s milk, it is firm yet still moist, so take a little time to enjoy the creamy, almost gooey layer just underneath the rind – a deep, savoury part of the cheese – and then let your tastebuds wrap themselves around a fresh citrusy centre.
