One man alone tends to this cheese as it matures. Phillip carefully tends to this cheese as it matures, paying heed to his in-built ‘cheese clock’. He has been making cheese for so long that he reacts to almost indistinguishable changes in the milk without even thinking.
The dairy, Somerset Cheese, is located right in the thick of Cheddar country, so it’s no surprise that Pendragon is made to the style of a Cheddar. Bite into it, though, and you’ll discover that the texture is more buttery than a Cheddar yet it has the tang of a very mature cheese, which comes from the use of buffalo milk.
