Some of the best cheeses happen into our kitchens by accident, and this sweet cheese has had a few revisions to make it the cheese we see today. In fact it was originally called Jersey Shield. That was until distinguished cheese maker William Oglethorpe got his hands on it and incorporated a brine wash into the process, delivering a gloriously sticky rind in a blushing pink-orange shade with a slightly pungent aroma. For his efforts the cheese now incorporates his name.
For cheese that melts evenly while still staying creamy, you’d be hard pushed to find better. This cheese is fruity and winey – think of it as a West Country Raclette, if you will.
