Imagine a nutty, crumbly cheese that you can idly nibble at as you potter around the kitchen. That will be a Montgomery Cheddar – a cheese completely different to your usual smooth Cheddar. The Montgomery family have their credentials in three generations’ worth of Somerset farming and cheese has been made by the family for over a hundred years. Tradition is important to these cheese makers and to this day they still use a slow peg mill, which is what gives the Montgomery its complex texture.
Set this one on the cheeseboard, and watch it disappear pretty quickly, or use to melt into the creamiest, tangiest Welsh rarebit on a rainy evening.
