Everyone is talking about Rachel. After being named the gold winner at the Artisan Cheese Awards 2017, this is the goat’s cheese to have on your cheese board. The name comes, rather sweetly, from a friend of cheese maker Pete’s, who he describes as sweet and a little bit nutty – just like the cheese. A carefully crafted artisan cheese, which is meticulously washed in brine to create a dusky, orangey rind, Rachel is firm with a smooth, clean flavour.
