Bagborough Brie is the acclaimed Gold winner of the Artisan Cheese Awards 2017, but it’s still a bit of hidden gem. While still typically creamy, this Brie is a little richer than ones that you might be accustomed to. It has an extra level of sweetness – think natural, hay-sweet from the use of Guernsey milk. Part of its charm lies in its rather sensitive nature; there is a small window of ripeness that requires a cheesemonger’s skill to manage. For us, it means that it’s wise to let it come to room temperature, and then dig into this oozy delight in one sitting.
