What do you want from a Brie? You want it to be soft, gooey and rich; melting under the pressure of the knife and ready to be slathered on fresh crusty bread. That’s exactly what this wonderfully nutty Brie is like, and is probably the reason it scooped a runner-up position for Best Soft Cheese and the People’s Choice at the Great British Cheese Awards.
The recipe is a closely guarded secret, but we do know that it is handmade from the milk of Jersey cows with the addition of goat’s milk. The cheese makers traditionally ‘wash’ the curds to retain moisture and ensure that Sharpham Brie is always a creamy sweet cheese.
