Ben Harris and his team at Ticklemore Dairy in Devon are quite literally churning out some of the best blues, made from the creamy Friesian cow’s milk. Originally, Devon Blue was created to fill the seasonality gap between cheeses (well, we do need cheese all year round), but it has firmly made name for itself. Its understated blue veining and smooth appearance makes it easy on the eye, and a clean buttery texture makes for easy eating too.
Slow and delicate maturation produces a delightfully soft cheese with a slightly crumbly texture, not too strong, and with a subtle sweetness and hints of walnut that linger on the tongue
